Saltbox Dining & Drinking, a Kimpton restaurant, has recently debuted as a new American gastro-lounge under the culinary direction of Executive Chef Simon Dolinky. Dolinky draws inspiration from local San Diego purveyors and farmers for an ingredient-driven “social plates” menu designed to be accessible and inspiring. Led by in-house Master Mixologist Erin Williams, Saltbox’s forward-thinking bar and cocktail program will do for handcrafted cocktails, spirits, and wine what the gastro-pub has done for beer.
